Almond Meal Chocolate Chip Cookies with Coconut

                                              WITH COCONUT
12 cookies

2  cups almond meal
¼  cup flour
⅓  cup chocolate chips
⅓  cup brown sugar
½  cup shredded unsweetened coconut
½  teaspoon baking powder
¼  teaspoon salt
1  egg
3  Tablespoons butter, softened
1  teaspoon vanilla

1.  Preheat oven to 375°.
2.In a small bowl, whisk up the egg, with a fork, until uniform in color.
3.  In a medium mixing bowl, mix together the whipped egg and all the remaining ingredients, with a metal spoon.
4.  Mix until well combined.
5.  Divide the dough into 12 balls.  They will seem large.
6.  Place the dough onto a parchment paper lined cookie sheet.
7.  Press down and flatten the cookies slightly.
(Whatever shape and size you make them right now is the size and shape they will be when they are baked.)
8.  Bake at 375° for 25-27 minutes or until the edges begin to brown.
9.  Best served warm, straight from the oven.
10.  Do not refrigerate.
11.  Best left uncovered or lightly covered with a towel on counter top.
12.  Eat within 3 days.
