Pond Street Irish Soda Bread

Pond Street Irish Soda Bread

3  cups flour
1  Tablespoon baking powder
¼   teaspoon salt
½   cup sugar
1  cup dried cranberries
½   cup raisins
1  egg
1 ¼   cup diluted canned milk (equal portions of water and evaporated milk)
2  Tablespoons butter, softened
2  Tablespoons sugar

1.  Preheat oven to 350°.
2.  Spray an 8x8 inch glass baking dish with cooking spray.
3.  In a large bowl, combine all the dry ingredients.
4.  Using a wooden spoon, mix in the egg, milk and butter.
5.  Pour batter into prepared pan.
6.  Sprinkle the sugar on top.
7.  Bake at 350° for 50 - 60 minutes, or until browned.
8.  To serve:  serve warm or slice it and put it in the toaster
